Team USA vs The World

Not specifically a "Team Canada" as such, but Team World is Canadian-heavy and has included a few locals.  It was first played in 2010 and presumably will continue to be held annually.

2011: USA 21, World 14
2010: USA 17, World 00

Early in 2007, NFL International released the following communication:

Over the last several months NFL International has reviewed several options in transitioning the NFL Global Junior Championship to be under the auspices of USA Football.

Over the course of this review it has become clear that the International Federation of American Football intends to host the first ever Junior World Cup in 2009. For this reason, NFL International has elected to work closely with IFAF and USA Football to make this event the linchpin of elite junior player development for IFAF member federations.

As such, the NFL Global Junior Championship will not be held in 2008 in anticipation of collaborating to launch the inaugural IFAF Junior World Cup in 2009.

In June of 2008, the IFAF followed through:

STOCKHOLM, SWEDEN – The International Federation of American Football (IFAF) Executive Committee announced from meetings in Scandinavia that the 2009 IFAF Junior World Championship (JWC) will be played from June 27 to July 5 in Canton, Ohio next summer.

Having announced the event last month, IFAF confirmed that the inaugural tournament will kick off on Saturday, June 27, 2009 at Canton’s historic Fawcett Stadium, home of the NFL’s annual Pro Football Hall of Fame Game, adjacent to the Hall of Fame. Games between the world’s eight best high school-aged (19 and under) national teams will also be played on Wednesday, July 1 and Saturday, July 4, before the Championship Game is contested on Sunday, July 5.

Joining host nation the United States as an automatic qualifier will be Canada. The Canadians will hold the number one seed once all eight qualifiers are finalized and placed in the tournament bracket, with USA the number two seed.

NFL GLobal Junior Championship

This tournament was held in the Superbowl host city and played the week leading up to the game. It was contested between a number of national teams and an American team made up of players from the state.  The championship was first played in 1997 but Canada only became a participant in 2000.
